Hi Friends! Today I have this yummy recipe that I made this weekend. This was the perfect dish to make for lunch and have leftovers for dinner. We are in the process of re-doing our living room so this was the perfect dish to whip up and have on hand after I was so tired I could barely stand!
This really hit the spot after spending all day smoothing out walls! For those of you who don’t know we recently purchased a home which was built in 1903. Lets just say the walls are not in perfect condition, so I’ve been smoothing them out with various techniques. Goodness… is it back-breaking work. I have a whole new level of respect for contractors. I already competed one room and taking my time was certainly worth it. The walls are all nice and smooth and beautiful now. I’m one of those people who over analyzes everything in the house and the dumbest things will drive me crazy (aka little tiny imperfections in the walls that no one else notices).
Not only was this great after all that work, it was super easy to make and one dish. YAASSSS! I really like orzo alot and need to play around with it some more, but it really works great in skillet dishes like this. I made something similar to this but Mexican style.
The combo of cheeses and panko also creates this delicious crust on the top. When I served it, I broke up the cheese a bit so you got a little with each bite. Nom!
Just check out that crust! Yum! I wish I could eat every meal with a layer of cheese on top of it! I’ll be trying more variations of this meal as I’d like to try a version with tempeh or tofu for my vegan friends. I’ll report back on that soon. 🙂 Hope you all are having a great week so far!

Italian Orzo with Chicken Sausage
- 2 cloves Garlic
- 4 oz Spinach
- 1 Lemon
- 4 oz Cherry Tomatoes
- 6 oz Chicken Sausage
- A few sprigs Parsley
- 2/3 cup Orzo
- 2 tsp Italian Seasoning
- 2 cups Chicken Stock
- 1/4 cup Mozzarella Cheese
- 1/4 cup Panko Breadcrumbs
- 1/4 cup Parmesan Cheese
Wash and dry produce. Mince garlic, chop the spinach, half the lemon, half the tomatoes and pick parsley from stems and finely chop.
Heat a drizzle of olive oil in a pan, cut two chicken sausages into slices. Place in pan and fry until golden.
Add tomatoes and garlic to pan. After 2-3 minutes add Orzo and Italian Seasoning.
Once orzo is covered in seasoning and moisture in pan, about one minute, add 2 cups of chicken stock to pan. Bring to a boil, then reduce and simmer for 7-9 minutes. Until orzo is al dente.
Stir in spinach for 2-3 minutes until wilted.
Add mozzarella cheese, then panko, then parmesan to top. Broil for 2-3 minutes until cheese is bubbly and golden brown.
While still hot, add parsley, squeeze of lemon, and salt (if needed).
