First Day of Spring Pizza!

Ahhhhhhhhh! It’s the first day of spring! Can you guys believe it? πŸ˜€ This is our second winter in Oregon since moving from Arizona, and it’s a little reminiscent of my time living in Wisconsin. Well… Oregon’s winters are much more mild than the midwest, but you still get that happy feeling when you see the sun shining and plants blooming! It just makes me so happy! I love to open the windows and get some fresh air! ahhhhh! 

The other great thing about spring is produce is actually in season! Shocking…. fruits and vegetables don’t grow all year round? Well they do, they just have to travel from further warm places in the winter. I love how ripe and juicy all the fruits are this time of year (and the price too)! 


So why not put some fruit on our pizza? I know.. I know. I have pretty strict rules about pizza and desserts. Nuts do not belong in desserts and fruit does not belong on pizza (especially pineapple). The funny thing is I really enjoyed this. The balsamic is what makes it. πŸ™‚ 


Man those strawberries were so perfect! The peaches are still a little early, but they still tasted delicious. Also no sauce on this pizza (another one of those rules, pizza has sauce). Top it all off with a balsamic and olive oil dressed arugula and walnuts. The mozzarella and balsamic give this pizza enough moisture so you won’t even miss the sauce! Nom!

Spring Time Pizza

A refreshing pizza full of all your favorite springtime flavors!

  • 10 oz Pizza Dough I love the pre-made kind from Trader Joes!
  • 1 Peach
  • 5-6 medium Strawberries
  • 1 oz Walnuts
  • 4 oz Mozzarella I use Pearls - saves prep time πŸ˜‰
  • 4 oz Arugula
  • Balsamic Vinegar
  • Olive Oil
  • Salt & Pepper
  • Balsamic Glaze


  1. Preheat oven to 450 degrees. Stretch dough on a lightly oiled baking sheet until it about 1/4" thick. Prick with a fork all over. Place in oven for 10 minutes.

  2. Halve, pit and cut the peach into small pieces. Slice your strawberries. Chop the walnuts. 

  3. After you have taken your dough out of the oven, place the mozzarella, peach and strawberry on the dough. Return to oven for 6 minutes until mozzarella melts slightly. 

  4. While pizza is baking, dress arugula with 1 teaspoon balsamic vinegar and olive oil. Season with salt and pepper.  

  5. Top the pizza with the arugula salad and walnuts! Enjoy!
