HUMPPPPPP DAYYYYYY! We made it half way thru the week. I don’t know about you… but burnout is real in the middle of the week. I come hot out of the gate Monday and by Wednesday I’m like “more coffee please?” When I’m planning my meals out for the week I’ve learned to make something easy mid-week otherwise we will end up getting takeout.
This is the perfect mid-week dinner. Not too challenging, but worth the effort! I was at my local Trader Joe’s and I saw they had sliced sirloin steak and I thought it would be perfect for a ramen style bowl and OMG.. it was good!
The tangy sauce you will make to cover the noodles and beef with makes this dish. I know it looks pretty basic and plain but it packs a punch with a ton of flavor. What’s your go to meal when you are exhausted but still need to eat healthyish?

Beef and Broccoli Stir-Fry Bowls
Tangy flavors cover beef and ramen noodles to make an awesome, healthy weeknight dinner!
- 16 oz Sliced Sirloin Steak if you can't find sliced purchase sirloin and slice as thin as possible
- 16 oz Yakisoba or Ramen Noodles
- 16 oz Broccoli Florets
- 4 Scallions
- 2 Cloves Garlic
- 2 Tbsp Cornstarch
- 1 Thumb Ginger
- 2 Tbsp Ketchup
- 4 Tbsp Soy Sauce
- 3 Tbsp Hoisin Sauce
Wash and dry all produce. Thinly slice the scallions. Finely chop the garlic. Peel and mince or grate the ginger.
Toss the steak in a large bowl with the cornstarch. Season generously with salt and pepper.
Heat a large drizzle of oil in a large nonstick pan over high heat. Add the steak. Cook 1-2 minutes per side, until browned and cooked to desired doneness. Remove from the pan and set aside.
Add the broccoli and a drizzle of olive oil to the pan you cooked the beef in. Cook at medium-high heat for around 10 minutes, until bright and slightly charred.
Meanwhile, In a clean pan heat a large drizzle of oil in the same pan over medium heat. Add the garlic, ginger, and scallions. Cook 1 minute, until fragrant. Add the noodles and a large drizzle of oil. Break up the noodles until no longer clumpy. Add 1 cup water. Cover and steam 3 minutes. Uncover and increase heat to medium-high. Toss 3-4 minutes, until noodles are tender.
Make the sauce: Add 2 Tablespoons ketchup, 4 Tablespoons soy sauce, 3 Tablespoons hoisin sauce, and 2 Tablespoons water to the pan. Toss 1 minute, until sauce is combined and thickened.
Toss the broccoli and steak into the noodles. Cook 1-2 minutes until warmed through. Taste the tangy beef stir-fry and season with salt and pepper. Enjoy!
